Inn at Pleasant Lake Potage Lyonnaise Recipe & Video

Enjoy this wonderful soup especially during the cold Winter months.

We call it Potage Lyonnaise (potato and onion soup) which is the combination mainly of potatoes and onions then blended with a bit of balsamic vinegar and cream.

1/2 spanish onion diced
3 – 4 large potatoes sliced thin
1 qt. vegetable or chicken stock
2 Tbsp balsamic vinegar
1 cup heavy cream
Salt, pepper, sugar to taste

Method:  Combine the onion, potatoes and stock then bring to a simmer.  Simmer until the vegetables have softened. Once softened, purée the mixture with either a hand blender, food processor or regular blender until smooth.  Check the consistency.  If the mixture is too thin you can always thicken with a slurry of corn starch and liquid or potato starch and liquid. To thicken bring the purée to a simmer and slowly stream in the room temperature slurry while stirring constantly.  Next, add the balsamic and cream.  Then season the soup to taste.  Use your seasoning to bring out the best balance in flavor.
